Super Simple Vegan Pancakes


1 cup whole wheat flour

1 tablespoon baking powder

¼ teaspoon salt

1 cup almond milk or dairy-free milk of  your choice

2 tablespoons of melted coconut oil

2 tablespoons of agave nectar or maple syrup

1 teaspoon pure vanilla extract

Mix dry ingredients together in a bowl. Mix liquid ingredients in a seperate bowl.

* if the coconut oil solidifies in the milk just heat it up in the microwave until it’s all liquid again

Then mix dry & liquid ingredients together.

Let it stand for about 2 minutes to get nice & fluffy.

Heat & grease up your pan and start cookin!

* this recipe makes about 4 pancakes – for even size I use 2 1/4 cups of the mix to make one pancake

I put rapsberries & blackberries in a bowl and put it in the microwave to make a “purée” then added some coconut flakes and hemp seeds!
