Meal prep Monday ideas: 1:  Gardein  chicken, brown rice, steamed broccoli, roasted peppers and some pico de gallo. 2. Tofu, roasted yams, and brown rice. 3. Chickpeas, brown rice, broccoli or green beans with slices of fresh tomato, also black beans, cucumber, and raw peppers for a snack. 4. Marinaded tofu, coconut rice, broccoli, and roasted peppers.

* For marinated tofu:

Step 1: Buy extra firm tofu

Step 2: Cut into blocks, or whichever shape you want
