What could be more fun than a gorgeous picnic on a gorgeous summery day? Yet, all too often you see the typical, heavy picnic that includes hamburgers, hotdogs, white flour buns, mayo-laden salads and sugary sweets.

So, what’s the fix? A vegan-based picnic! With a few simple steps, you can plan a delicious and fun-filled vegan picnic with healthier plant-based food options that will leave you feeling good inside and out!

  1. Food For Your Picnic

What Will You Need?

Rainbow Vegan Potato Salad (Recipe from I Love Vegan)

  • 1.5 lb bag Little Potatoes (cooked)
  • 5 tbsp Hellmans vegan mayo
  • ¼ tsp salt
  • ¼ tsp paprika
  • black pepper to taste
  • ¼ cup carrot, grated
  • ¼ cup celery, thinly sliced
  • 3 tbsp dill, finely chopped
  • 1 tbsp red onion, chopped
  • 2 tbsp green onion, finely chopped
  • 2 tbsp green bell pepper, finely chopped
  • ¼ cup red bell pepper, finely chopped

Throw it all into a bowl and mix, so easy! Add spices after.

Chickpea Salad Sandwiches

2 cans of chickpeas, rinsed
3 small stalks of celery, thinly sliced
4-5 dill pickles, finely chopped
4 tbsp vegan mayo
1 tbsp yellow mustard
1 clove garlic, finely chopped
1 tbsp of olive oil
1/3 cup grated carrots
1/4 cup grated red cabbage
1 tbsp lemon juice
salt and pepper to taste
All you need to do is mash about 1 can of the chickpeas in a bowl until they create a rough paste. Add the remaining chickpeas and all other ingredients to a bowl and mix, easy, peasy, lemon squeezey!
The organic lavender lemonade is from By Ollia they have a store on 17th Ave here in Calgary, and they are also sold at the Nordstrom E-bar.
 The bowls we used are custom ceramic bowls by Emily Bed which you can you can use for salads, glory bowls etc.
